The Chef de Cuisine position for Sonoma Pizza Company is a very strategic position reporting to the Executive Chef. The CDC is responsible for directing the operations of the kitchen, monitoring sales, controlling costs, achieving profit objectives, and maintaining the highest standards of food quality, service, cleanliness, safety, and sanitation in partnership with the other managers. Specializing in hand-crafted pizza, expect everything from wood-fired Neapolitan, New York, Detroit, Roman, Grandma's, and even our very own Sonoma style. Fresh salads, seasonal sides, and vegan/gluten free will round out the menu. A hyper-local selection of wine, beer, craft cocktails, and non-alcoholic beverages provide the perfect match for our cuisine. With both outdoor garden dining and an enclosed terrace dining room, SPC will offer informed counter service in a fast-paced and fun environment. QualificationsWe are looking for candidates with a minimum of 3 years of experience as a line cook and/or pizzaiolo and at least 1 year in a supervisory or management role. This qualification is a must. Required skills include, but are not limited to the following:

  • Intimate familiarity with all stations in the kitchen
  • Knowledge of wood fire cooking and dough maintenance is a must
  • Conscious of quality, cost and seasonal availability
  • Proven menu planning, inventory, kitchen safety and sanitation management
  • Ability to make the RIGHT decisions instantly and consistently that gets the best from every situation
  • Must lead-by-example/ lead from the front
  • Excellent food handling skills / techniques and portion management
  • Reliable and flexible under pressure
  • Ability to train, motivate and effectively counsel staff
  • Consistently respectful and mindful of our objectives for service and quality
  • Excellent communications skills (English speaking with basic kitchen Spanish required)
  • Proficiency or adeptness at using Google drive for documents and spreadsheets
  • Must be able to work on feet for up to 8 hours and lift up to 50lbs - or ask for support ResponsibilitiesThe CDC job responsibilities include, but are not limited to:
    • Weekly meetings with the Executive Chef & Owner to discuss prime costs. Bringing ideas and a creative spirit to the meeting
    • Writes thorough prep lists, and food ordering lists for the week
    • Manages sourcing ingredients and leads wholesale account ordering from farms and other vendors
    • Responsible for directing all daily operations of the kitchen, service, directing all food preparation, and management of the kitchen staff
    • Responsible for managing the kitchen staff schedule
    • Lead the hiring process for any new kitchen hires
    • Proper documentation and alteration of recipes, noting problems with yield or food waste
    • Comply with and enforce sanitation regulations and safety standards
    • Assists in HR issues with Executive Chef
    • Encourages positive work environment and support professional growth of employees
